The Bollinger Vineyards: A Unique Terroir

Unlike many other Champagne houses that rely heavily on sourced grapes, Bollinger is one of the few maisons that owns and controls the majority of its vineyards—an impressive 178 hectares across Aÿ, Avenay, Louvois, Tauxières, Verzenay, and Mareuil-sur-Aÿ.

Over 85% of the vineyards are classified as Grand Cru and Premier Cru, ensuring an exceptional level of quality. The house is also one of the last to maintain a monopole vineyard, the legendary Clos Saint-Jacques, which produces some of its rarest Champagnes.

• Fermentation in Oak Barrels – Bollinger is one of the few Champagne houses that still ferments a significant portion of its wines in old oak barrels, adding richness, depth, and a signature oxidative character.
• Aged Reserve Wines – The house keeps an extensive collection of reserve wines, stored in magnums under cork, which are later blended into its non-vintage cuvées to ensure consistency and complexity.
• Extended Lees Aging – Bollinger ages its Champagnes for significantly longer than the legal minimum, enhancing their texture, depth, and aromatic intensity.
• Hand Riddling and Disgorgement – While many producers have transitioned to mechanized processes, Bollinger maintains traditional hand riddling for its top cuvées.
