Founded by the late Laurent Vaillé in 1989 in the rugged and picturesque hills near Aniane, in the heart of Languedoc, this estate has become one of France’s most celebrated cult wineries. What began as a quiet, almost defiant endeavor outside the grand traditions of Bordeaux and Burgundy, has grown into a benchmark for what southern French wine can aspire to be—complex, age-worthy, and deeply expressive of place.</p>
<p class="" data-start="696" data-end="1226">Laurent Vaillé, a trained physiotherapist with an insatiable curiosity for wine, was not born into a winemaking family. Yet he was mentored by some of the greatest names in the industry: Eloi Dürrbach of Domaine de Trévallon, Gérard Chave of Jean-Louis Chave, and the legendary Didier Dagueneau. These influences shaped Vaillé’s philosophy: a devotion to low yields, meticulous vineyard care, and minimal intervention in the cellar.
