Wine laws dictate what must be vinified in which barrel, with which grape, for how long. Sangiovese is king — but it must be blended with white grapes, as the law demands. Those who ignore it lose their DOC status. Those who go too far technically produce nothing more than a simple table wine.</p>

Ageing in small French barriques rather than traditional large barrels. No DOC title — this wine goes by the humble name of &#8220;Vino da Tavola.&#8221; Table wine. But what a table wine.</p>
