Founders’ Background

Mounir Saouma’s journey into winemaking began in the late 1980s when he visited a Trappist monastery in the Middle East. During this time, he worked in the monastery’s vineyards, gaining foundational knowledge in viticulture and winemaking. Rotem, coming from a cheese-making family, studied agriculture in Dijon and, after receiving a national prize from the French Academy of Agriculture for her study of the Côte d’Or, dedicated herself fully to wine.
